MIRACLE BEACH 5K and 10K / CHOCOLATE CHIP OATMEAL COOKIE RECIPE

We got to wake up 8am for this race which was perfect, seeing as I stayed up til midnight decorating the house for our upcoming Halloween party (...Yes it's a tad bit early). Anyway this race was great. Miracle Beach is a lovely area. I told Seth to run beside Connie (my mother in-law) because I was pushing Kyri in the stroller and I didn't want to hold them back. I got stopped right before the race began, only for them to tell me that I had to drop out of the race. No strollers allowed! Rip off! She said they weren't insured to have babies or dogs run in the race. So I took off my bib number and was no longer apart of the race, but I decided to run anyway. I caught up to Seth and Connie at 3.5K and we ran the remainder of the race together. We didn't stop running once! Kyri cried the last 1K. Poor baby. I am so proud of Seth! It was his first marathon at 7 years old. What a champ! After the race I handed in my bib number and got my money back.

Tod, my amazing husband, ran the 10K. He just ran a full marathon, 42K, last Sunday! He loves to run. 

Seth, Kyri and I went home while Tod and Connie stayed for the awards. Tod came in 3rd place for his age group. Way to go babe! Tod ran into the lady who refunded me and him and Connie convinced her to give me my bib number back. She said she would mail it to me. That's exciting that I get to keep my number. Tod and I have our pictures and bib numbers framed on the wall from my last race, the TC 10K.

Once we arrived at home Kyri and I had a nice long nap and then we made chocolate chip oatmeal cookies. I mixed the dough, which tasted so amazing I was surprised there was any left, Seth helped shape the cookies and do the dishes and Kyri helped hold the wooden spoons. 







Below are pictures from my last race, which was the Times Colonist 10K race in Victoria, BC. I ran this race with Tod and his parents. That was the best first race I could have ever asked for. Chocolate Chip Oatmeal Cookies
Makes 18 cookies
    Ingredients:

    DRY
    • 1 1/2 cup nuts, processed or ground (I used almonds and pecans)
    • 1 1/4 cup gluten-free oats - quick
    • 1 3/4 cup oat flour
    • 1 tsp. baking soda
    • 1 tsp. cinnamon
    • 3/4 cup dark chocolate chips
    WET
    • 1/2 cup pure maple syrup or unpasteurized honey
    • 2 tbsp unsweetened almond milk 
    • 3 tbsp virgin coconut oil, melted
    • 2 tsp pure vanilla extract
    What to do

    1. Preheat oven to 350° F (175° C). Grind down nuts in a food processor or high speed blender. Add nuts to a large bowl, along with dry ingredients. Stir dry ingredients and then add wet ingredients and stir again.

    2. For easy cleaning I use parchment paper on 2 cookie trays. Make as many cookies as you can by using a large spoon and a round cookie cutter. Fill each cookie cutter with a spoonful of dough and pat down with the back of the spoon, to even out the cookie. It will help the cookie hold it's shape after it's baked. When dough is all made into cookies place the cookie trays in the oven on two middle racks.

    3. Bake for 5 minutes and then switch the cookie trays. Move the top tray to the bottom and move the bottom tray to the top and bake for another 5 minutes. Let cool for 20 minutes and then you must eat at least 2! When the cookies have cooled move the cookies to an air tight container. Cookies will keep fresh for 4-5 days.

    They are soo amazing. I always bake these cookies as a Thank You token for my friends and family.
