I can't stop making treats. I have a serious addiction. But it's okay. I have it under control. Just one more bite......
Serves 9
Dry
- 1/2 cup coconut flour
- 1/2 cup cacao powder
- 1/2 cup coconut sugar
Wet
- 2 bananas, mashed, fresh or frozen - thawed
- 1/3 cup coconut oil
- 1 tsp. pure vanilla extract
- 2 organic eggs or 2 flax eggs - 2 Tbsp. ground flax + 6 Tbsp. filtered water
- 1/4 cup coconut milk beverage - I used the So Delicious brand
Frosting
- 1 large dark chocolate bar
1. Preheat oven to 350° F (177° C). If making flax eggs - grind flaxseed in a high speed blender and add water. Place in the fridge to let set for 10 minutes.
2. In a medium pan over low heat melt coconut oil. Add cacao powder, vanilla, coconut sugar and coconut milk and stir. Add to a bowl along with your bananas, eggs or flax eggs and blend with a hand held mixer until smooth. Mixture should be VERY thick.

3. Add coconut flour to a bowl. Mix again. Add batter to a 6 X 6 baking dish, lined with parchment paper. Bake for 32 minutes. After it is done take out of the oven and leave in the baking dish.
4. When cake is done. Make frosting. Melt the chocolate bar in a pan over the lowest heat and stir. Add to cooled cake. Let cool for another hour. Cut into 9 equal squares and serve.
