AUTUMN WALK / PEANUT BUTTER NANAIMO BAR

All of a sudden life is at a standstill....woah that only lasted for about an hour. Life is always go go go with kids and a dog. Making dinner, giving baths, play time, changing diapers, cleaning, doing laundry, playing with toys, reading books, feeding Kyri (my favourite), making sure homework gets done, and driving kids to dance, swimming lessons and school. Watching Game of Thrones with Tod is our calm time, our relaxing time, while we eat our popcorn and cuddle. Love! 

Goals/plans for this month: 
  • Kyri's swimming lessons
  • Seth's swimming lessons
  • West Edmonton Mall at the end of the month! Looking forward to that. 
  • I want to start making Christmas gifts. I'll need Tod's help with that. 
  • Help in the community some how. Any suggestions?
  • Work on my cookbook
Our favourite family time is going for walks. The kids usually walk infront of us while they sing and play. It's nice to hear them so happy. Kyri loves walks too. She is always so quiet, looking around and enjoying the scenery. The ocean and mountains are at our front door. Tod and I just love to see the neighbourhood and just be together. I thank God everyday for all that we have.















PEANUT BUTTER NANAIMO BAR
Makes 15 bars

Ingredients

Cookie:
1/2 c coconut oil
1/3 c cocoa powder
1 3/4 c graham cracker crumbs (I used Gluten-Free Graham Crackers)
1 c shredded sweetened coconut
1/2 c walnuts or almonds - processed fine

Peanut Butter Filling:
1 tsp coconut oil
1/3 c peanut butter or a nut butter of your choice

Chocolate Top:
2 large dark chocolate bar - melted

What to do:

Line an 8 by 8-inch baking pan or casserole with parchment paper, with long flaps hanging over each edge.
For the cookie: Put the oil in a pan and put stove on low. Add the cocoa, and stir to combine. Remove from the heat and stir in graham crumbs, coconut and nuts. Press the dough firmly into the prepared pan.


For the filling: Melt the oil in a pan and add peanut butter. Heat on low and mix. Spread over the cookie and freeze while you prepare the chocolate glaze.
For the Top: Put the chocolate in a medium heatproof bowl, and set over the barely simmering water. Stir occasionally until chocolate and smooth. Remove from the heat and pour the chocolate layer over the chilled peanut butter layer and carefully smooth out with an spatula. Freeze 30 minutes.

To serve, remove from the freezer and let sit at room temperature for 5 minutes. Pull out of the pan using the parchment paper flaps and transfer to a cutting board. Cut into 1-inch squares with a sharp knife. Serve cool
