RICE PUFF BARS - NO BAKE





RICE PUFF BARS
Makes 20 bars

Ingredients:
  • 1 cup raw almond butter
  • 4 tsp unpasteurised honey
  • 1 tsp pure vanilla extract
  • 1/4 almond milk
  • 2 cups rice puffs - so sugar added
  • 1 cup oats - quick
  • 1 oz hemp hearts (optional)

Topping
  • 1/4 cup dark chocolate chips, melted

What to do:

1. Heat a large pan on low heat for 5 minutes. Take the pan off the heat and add the milk, almond butter, honey and vanilla. Stir until it becomes a creamy mixture.

2. Add oats, hemp hearts and rice puffs to a bowl and add warm mixture to it. Stir well with a spoon until all the oats and rice puffs are coated.

3. Add to a square baking dish lined with parchment paper, for easy cleaning. Spread out and flatten. Put dish into the refrigerator for an hour.



4. Melt chocolate chips in a bowl placed in a pot of hot water. Let melt over 10 minutes, stirring occasionally. Take dish out of the fridge and pour melted chocolate on top. Spread chocolate over the top of the rice puff bar and put back into the fridge until serving time.

5. Cut into 20 bars and Enjoy! Keep refrigerated.

I gave them out for dessert but I saved mine and enjoyed in while soaking in a nice hot bath. It was perfect.
