WEEKLY FOOD ROTATION

Oi! I don't want to say (admit) that we eat the same thing every Wednesdays but we do! We always make gluten-free pizzas! Last week I tried a raw crust that I had dehydrated and it was good! Super filling. I only needed one 1/4 and I was done like dinner!

These meals are the lucky weekly rotation dinners we have been enjoying.

THAI COCONUT PASTA

The prep for this dinner is so easy. I just cut the veggies while I make the salad, boil the noodles and through the spices in while I heat up the coconut milk. Love this creation. Prep time is 10 minutes. Cook time is 20 minutes.


FRIED YAMS & SWEET POTATOES - sometimes twice a week
This is a yummy simple recipe. I love the chipotle vegenaise on it. Makes it creamy with a light kick. The prep time is about 15 minutes, 10 of it is to let the potatoes sit in water to clean with apple cider vinegar, so really it takes no time at all. The cook time to fry is about 15-20.

RICE with STEAMED VEGGIES
I cook brown rice with a can of coconut milk - full fat for a creamy texture. The kids love it. I steam broccoli, carrots, mushrooms and cauliflower to go on the side. I add Mrs. Dash and a little bit of honey to the steamed veggies. Delish. If I want a vegan meal I take out the honey and add a bit of diced Mango on top of my rice. Prep time is about 15 minutes. Cook time is 25 minutes.

HOME MADE PIZZA - store bought gluten-free crust
The kids love this pizza. Seth likes it super plain like this picture above and the rest of us like EVERYTHING on it. Including spinach. We eat this pizza every Wednesday and if I didn't make it then I make up for it by making it on the Thursday. The prep time for this dinner is 30 minutes and the cook time is around 20, pre-baking time included.


FALAFEL - ohsheglows
This recipe is awesome. Angela makes amazing Vegan food. I use her recipes that don't have sugar or at least I will sub it out for honey or maple syrup. This recipe is with chickpeas and veggies, fry em up and eat them with the amazing tahini lemon sauce. I would cut the lemon sauce recipe 1/4. It makes quiet a bit. This recipe serves 3 people. Prep time is around 30 minutes and cook time to fry is around 30 min as well.

Left overs with OVEN BAKED POTATO WEDGES
These potato wedges are to die for! They are crispy and satisfying! You just must give them a fry. Delicious with veggies burgers or falafel. Prep time is 10 minutes and cook time is 20 minutes.

I always make new recipes on the weekends so there you have it. Our usual weekday line up. I'm getting new recipes from Wholly Vegan, Gluten-free-vegan-girl and The Vegan Chickpea. They look so nummy!
