COCONUT CURRY PAPRIKA SOUP WITH VEGGIES AND LONG GRAIN BROWN RICE


3...no 4 times I've made this soup this winter.

It's so easy and yummy!

I've been so busy planning an event in my community that blogging has been pushed to the back of priorities! Sorry!! This recipe totally makes up for it.

COCONUT CURRY PAPRIKA SOUP WITH VEGGIES AND LONG GRAIN BROWN RICE
Coconut milk and curry combined has to be my favourite dinner flavour. It turns into this creamy Indian bowl of deliciousness. I like my soups with a mild kick but feel free to add more curry if you like it hot hot hot! The base to this soup is so easy to make! Veggie broth, coconut milk, spices, and a bit of honey! From there you can add your rice and any steamed veggies you like. I use whatever I have on hand. Today it was yellow bell pepper, snap peas, carrots and broccoli.

Serves 6

Soup base
  • 8 cups (2 cartons)low sodium veggie broth
  • 1 can coconut milk, full fat
  • 1 Tbsp. curry powder
  • 2 tsp. red curry paste
  • 1 tsp. paprika
  • 1 Tbsp unpasteurized honey or brown rice syrup

  • 1 cup brown rice, long grained
  • 2 cups water

  • 2 cups diced veggies of your choice
  • 1 Tbsp. of your favourite seasoning (I used Mrs. Dash)


1. Rice - Place the rice and water in a small pot and heat over high heat until it boils. Cover and turn the temperature down to low heat. Set the timer for 25 minutes. When bubbles are gone rich is done. Turn off heat, fluff and stir rice with a fork, cover and let sit for 5 minutes.

2. Veggies – Add diced veggies in a medium pan with ¼ cup water and heat on medium/low heat and steam for 10 minutes, covered.

3. Soup base – Add veggie broth, coconut milk, curry powder, curry paste, and honey to a large pot and heat on medium heat and whisk well. When rice and veggies are cooked add to soup base. Stir and serve hot.

Optional – Garnish with ground celtic sea salt, nutritional yeast, and white chia seeds.

For honey I use Big D's Bees honey. It's local and it's unpasteurized. Using local honey will help prevent allergies, will alkalize the immune system (only if it's not pasteurized), and it has many vitamins and minerals that help boost the immune system. A teaspoon of honey a day gives you energy and it's a wonderful product from nature, so please use honey (if you aren't vegan) in your tea, to garnish on porridge and to cook with instead of refined white sugar. A good quality honey (raw & unpasteurized) has been said to prevent diabetes, cancer and other diseases. Cool eh!
