Vegan and Gluten-free Chili! What could be better? YUM YUM!!!


THE BEST CHILI

Serves 6


Ingreidents:

  • 1 large onion, red or white , chopped
  • 3 cloves of garlic, minced
  • 1 large yam, cut into small cubes
  • 1 orange or yellow bell pepper , diced
  • 1 red bell pepper, diced
  • 3 celery stalks, chopped
  • 1/2 mushrooms, diced 
  • 1 small can tomato paste
  • 2 tsp. apple cider vinegar 
  • 4 tsp. maple syrup (optional)
  • 1/4 tsp. chili powder or taco seasoning
  • 1/2 tsp. paprika 
  • 1/2 package of organic chili seasoning
  • 1/4 tsp. celtic sea salt 
  • 1 can black beans 
  • 1 can Cannellini or kidney beans 
  • 1 can of mixed beans 
  • 1/4 cup vegetable broth 
  • 1 cup brown rice (optional)


What do do:

1. Add coconut oil to a large pot and fry onion, garlic and yam for 15 minutes on low heat.

2. Add veggies and fry for another 10 minutes. Add mushrooms after 5 minutes.

3. Add paste, vinegar, maple syrup and seasonings. Stir. Add beans, broth and rice (if using). Stir and add remaining ingredients. Simmer 45 minutes to an hour.  

4. Serve with nutritional yeast, chia seeds and celtic sea salt on top.
