RAW: HAZELNUT MILK








HAZELNUT MILK
Makes 3 cups

Ingredients:
 
  • 1 cup raw hazelnuts, soaked previously for 3 hours, rinse well
  • 3 cups filtered water
  • 3 dates, soaked
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon

What to do:

1. Remove pits from the dates and soak in hot water for 10 minutes.

2. Blend all ingredients on high speed until smooth.


3. Strain milk in a tea strainer or two layers of cheese cloth. If using a tea strainer stir inside the strainer to help strain the milk.  Save the hazelnut pulp to make hazelnut cookies. 

4. Garnish with fresh nutmeg.

5. Keep in a sealed jar or container and store milk in the fridge. Will keep up to three weeks. Shake before drinking.

    We enjoy hazelnut milk warm or cold. If we drink it cold I shave/grate fresh nutmeg on top. If we drink it warm I heat it up a tad and add 1/2 tsp. unpasteurized honey and add cinnamon on top. Deeeelish.
