RAW: CHOCOLATE CASHEW BARS


I've been trying to come up with more raw recipes for snacks and treats to keep all their nutrients in them, rather then baked which kills vitamin nutrients and pasteurizes the honey...

Anyway...here is the Chocolate Cashew Bar Recipe

Ingredients:

Base
  • 1 cup gluten-free organic oats - quick
  • 1/2 cup oat flour
  • 1/2 cup ground raw cashews
  • 4 tsp pure maple syrup
  • 1/4 cup coconut oil, melted
  • a pinch of sea salt
Place coconut oil in a small heat proof bowl. Add hot water to a pot and put the bowl in the water to melt coconut oil. 
Ground the raw cashews and add to a large bowl. Add remaining ingredients. Stir. Add parchment paper to a square baking dish. Add mixture and press down firmly with a fork.
Place into the freezer.

Middle
  • 1 cup cashew butter
  • 2 tsp unpasteurized honey
  • 1 tsp pure vanilla extract
  • 2 tsp raw cacao powder
  • 1/2 cup organic sugar free rice puffs
  • a pinch of sea salt

Mix ingredients together. Add to the base layer and smooth out evenly.
Place back into the freezer.

Top
  • 1/4 cup vegan dark chocolate chips, melted

Melt chocolate chips in a bowl, place the bowl in a pot of hot water - same as coconut oil. Place on top of middle layer and freeze until ready to serve.

Melt the coconut oil and mix in cacao powder, salt and vanilla and pour on top of middle layer and freeze until ready to serve.
