I've been trying to come up with more raw recipes for snacks and treats to keep all their nutrients in them, rather then baked which kills vitamin nutrients and pasteurizes the honey...

'Does unpasteurized honey have any health benefits? Yes! Honey is more than just a sweetener! There are many health benefits of honey and it has a long history of use as a "medicine." Eating honey has a stabilizing effect on our body's blood sugar levels and does not stimulate as rapid insulin production as sucrose (table sugar) or glucose. Honey has an antibacterial effect and inhibits the growth of many bacteria strains, including the bacteria responsible for ulcers. Honey has been used in topical dressings to treat infected surgical wounds, burns, and skin grafts. Honey significantly increases antioxidant levels in the blood while improving immune system activity. A tablespoon or more of honey consumed at bedtime promotes natural restorative sleep by preventing metabolic stress due to depleted liver glycogen stores. Without metabolic stress during rest, stress hormones are not released, maximum fat-burning during rest is possible, and natural restoration of body tissues and immune system functions occurs naturally.'

Honey in the bear shaped plastic container is pasteurized and is not healthy!

Anyway...here is the Chocolate Cashew Bar Recipe

  • 1/2 cup oat flour
  • 1/2 cup ground raw cashews
  • 4 tsp pure maple syrup
  • 1/4 cup coconut oil, melted
  • a pinch of sea salt
Place coconut oil in a small heat proof bowl. Add hot water to a pot and put the bowl in the water to melt coconut oil.
Ground the raw cashews and add to a large bowl. Add remaining ingredients. Stir. Add parchment paper to a square baking dish. Add mixture and press down firmly with a fork.
Place into the freezer.

  • 1 cup cashew butter
  • 2 tsp unpasteurized honey
  • 1 tsp pure vanilla extract

  • a pinch of sea salt

Mix ingredients together. Add to the base layer and smooth out evenly.
Place back into the freezer.

  • 1/4 cup vegan dark chocolate chips, melted

Melt chocolate chips in a bowl, place the bowl in a pot of hot water - same as coconut oil. Place on top of middle layer and freeze until ready to serve.

Melt the coconut oil and mix in cacao powder, salt and vanilla and pour on top of middle layer and freeze until ready to serve.
