PEANUT BUTTER CHOCOLATE CUPS


Hey Everyone!! How have you all been doing? How's your new fall routine going? Mine hasn't changed yet because the kids still aren't back in school due to the teacher strike. Hopefully by next Tuesday the kids will go back. (Mommy is going a little bit gaga)


I was super bummed out last weekend. I got sick and was unable to run the 10K that I planned on doing with a friend. I thought I had Ecoli, then I just thought I was dieing, then as I was getting better I came to the conclusion that it was just some awful stomach bug. I've been having a super weird year with getting sick. 


I've had two fevers, one cold and 1 stomach bug. (Nothing compared to how I used to be, read here for more on that topic) I know I'm no superwoman but I would like to think I'm healthier then that! But the thing is is that when I had my fevers it wasn't like a normal fever/flu sickness. I didn't have a cold with it and I honestly felt like I was just going through a healing crisis - meaning I was just getting rid of stored toxins and/or cleansing.


I've been studying holistic health now for the last 3 years and I now know that your body needs to store enough energy before you get sick. So in case you can't eat (due to nausea) then your body has enough stored energy to help you heal. So without taking drugs I let my body do it's thing.


But while this is happening I am unhappy. I am moody, sad and in pain. I start doubting my health and my whole life seems a bit pointless. This was my weekend. Plus I went 30 hours without eating so that would make anyone a tad bit grouchy. I layed in bed, had baths, drank herbal tea and water and read and slept. Tod, my dearest husband, took care of the kids. Now he IS SUPERMAN!


It was a long three days but now that I am free of that nasty bug I feel 120% better! The world is a brighter place. I feel cleansed. I feel energised, refreshed and new! Ready to start each day again.

And what was the first thing that I wanted to make!? These darn peanut butter chocolate cups! My great friend Jess showed me a link to the original recipe and I just HAD to make them. The coconut oil is so over powering so I modified the recipe. I hope you love my version and please make sure to check out the original blog post from Beyond Diet!


Peanut Butter Chocolate Cups
Perfect melt in your mouth treats. Great cut up on coconut milk ice cream or eaten alone. A perfect homemade gift would be to package some of these bad boys up and say “Thanks for being my friend. You deserve these Beyond Diet's Healthy Chocolate Peanut Butter Fudge, pure genius.

Makes 12 chocolate cups

·         1/2 cup cacao butter
·         1 Tbsp. coconut oil, melted
·         1/2 cup peanut butter
·         1/4 cup cacao powder
·         1/4 cup carob powder
·         1/4 cup unpasteurized honey
·         2 tsp. pure vanilla extract
·         1/4 tsp. celtic sea salt

·         1/4 cup raw almonds (optional)
·         shredded coconut (optional)
·         dash of celtic sea salt, ground (optional)

1. Melt cacao butter and coconut oil in a medium pan on low heat. Add all ingredients. Stir well to combine and turn off heat.


2. Pour chocolate mixture into parchment muffin cups, evenly between the 12, (add almonds to the center, if you wish, or top with shredded coconut and a dash of ground celtic sea salt) and refrigerate for 2 hours until firm. Place in an air tight container and store in the fridge. Freeze if you want to store them for later. Eat cold.
