NUT MILKS


I know we can all go to the grocery store and buy our favourite type of non dairy milk but it's so much more cool to say that you made your own! On a previous post I made hazelnut milk but I think it was more of a dessert type of drink. Almond milk is more casual. You can add it to baking, soups, or just blend it up and drink it. The foamy texture it just like a milk shake. Strawberry was my favourite!

Without further ado I give you my nut milk recipes:

Nut Milk 
A great soothing, silky, dairy-free drink to enjoy at home, warm or cold. Vanilla, chocolate and strawberry flavours. 

Makes 3 ½ cups

Prepare ahead - Soak 1 cup raw almonds, covered in filtered water, for 4 hours 
- Remove pits and soak dates, covered in filtered water, for 20 minutes


·          1 cup raw almonds, soaked 
·          3 ½ cups filtered water

Vanilla 
·          1 1/2 tsp. pure vanilla extract
·          5 dates, pits removed and soaked 


Chocolate 
·          2 Tbsp. cacao powder 
·          1/2 tsp. pure vanilla extract
·          5 dates, pits removed and soaked 

 
Strawberry 
·          10 fresh or frozen strawberries, top cut off 
·          1/2 tsp. pure vanilla extract 
·          5 dates, pits removed and soaked 



1. Soak almond for 4 hours. Rinse. Soak dates for 20 minutes. Drain.

2. Pinch almond skins off and discard. Place skinless almonds and 3 cups of water in a high speed blender and blend on high until smooth.

3. Strain with a tea strainer or cheese cloth. If using a tea strainer stir inside the strainer to help strain the milk. Save the pulp for cookies. 


4. Pick a flavor. Blend with ingredients until smooth. Strain strawberry milk to remove seeds with a tea strainer or cheese cloth. Serve. 

5. Store in the fridge in an air tight jar. Will keep for 2 weeks.
