Maple Pancakes

Serves 1 – Makes 5 pancakes
Dry
· 1/2 cup brown rice flour
· 1/2 cup oat flour
· 1 tsp. baking powder
· 1/2 tsp. potato starch
Wet
· 1 cup unsweetened coconut milk beverage or homemade almond milk
· 4 tsp. pure maple syrup + 1/4 cup for topping
· 1 tsp. pure vanilla extract
· 1 large banana
· 5 tsp. coconut oil, for frying (may use more or less)
1. Place 1 tsp. of coconut oil in frying pan and turn on to low/medium heat. Coconut oil should sizzle when added. Use 2 frying pans if you want to speed things up.
2. Add dry ingredients to a bowl, stir and break up any flour clumps.

3. Add wet ingredients to a high speed blender and blend on high until smooth. Pour into the bowl with the dry ingredients and stir until fully incorporated.
4. Add a ladle full of batter into the frying pan to form a small pancake. Using the back of the ladle press down gently in the middle of the pancake in a circular motion, flattening the pancake. Fry on one side for 5 minutes, until golden brown. Flip and fry for another 4 minutes. Add cooked pancakes to a plate covered in paper towel. Do this step with all of the batter.
5. Serve hot with maple syrup on top and enjoy!
We had such a wonderful Easter dinner at my parents house last night. The kids all got a book with a couple Easter toys. Tod bet Seth he couldn't do 100 squats....he bet Seth $100 so Seth went to work and did 100 squats, no problem! Then I said "LET ME TRY" and I did 100 squats with Seth. So Seth did 200 and I did 100 and now our legs are like Jello! haha
Tonight we are doing Easter dinner with Tod's parents. I am looking forward to more love, food and dessert! I LOVE HOLIDAYS!
